  Cookbook by Nina Chen Beef slices: 200g; onion: half, sliced, cooked rice: as much as you want; some broccoli and carrot slices, boiled for a bit   For the sauce: mix together 2 tbsp soy sauce, half tbsp dark soy sauce, 1 tbsp cooking wine, 1 tbsp oyster sauce, 1 tbsp honey or sugar, 1 tbsp cornstarch, and half a cup of water.   1. Get all your sauce ingredients in a bowl and stir. 2. Bring a pot of water to a boil, then throw in the beef slices. Take them out the moment they change color, about 30 seconds. This gets rid of any gunk and keeps them tender. 3. Heat a little oil in a pan and cook the onion slices over medium heat until they go soft and see-through, should take about 2 minutes. This brings out their sweetness. 4. Add the boiled beef to the pan with the onions, then pour in your sauce. MZ's caramel pudding

  Caramel pudding  (For about 4 puddings) Ingredients:  White sugar 80g  Water 60g  Heavy Cream 240g  Milk 250g  2 Eggs  1. Measure out 55g of sugar in a pot and add 30g of water in it, heat until it boil then  reduce the heat. No need to stir, just gently sway the pot is enough.  2. Heat until it turn slightly dark amber color, add 30g of water, continue swaying the pot  under heat to ensure there isn’t any solid caramel left (because the water added could  cause some to solidify). Pour the caramel into the mold, a thin layer would be enough, set  it aside and allow it to cool.  3. Heat the cream and milk together in a pot until it boil.  4. Mix the egg with 25g of sugar until no more solid sugar seen, gradually add the boiled  cream and milk while stirring it.   5. Inspired by the Chinese hot pot style of cooking , this is a very simple and affordable meal that works perfectly when cooking for one. It’s basically an English-style version using supermarket ingredients that are easy to find in Tesco or ASDA. The idea is simple: simmer fish and vegetables in a light broth, cook some rice, and add chilli sauce to taste. It’s warm, healthy, quick, and perfect after a long day.   This is by far one of the cheapest meals you can make that go the distance. They are diverse so each batch can taste totally different depending on the topping! For example. 1kg of flour and a 12 pack of eggs can set you up for 6 meals, with flour left over for the next time! You can even freeze them safely once cooled for later. Ingredients: 100g plain flour 2 large eggs 300ml milk 1 tbsp  sunflower or vegetable oil plus a little extra for frying Lemon wedges to serve (optional) Caster/ granular sugar to serve (optional) You may also use fruit of choice to serve instead of lemon and sugar. Mrs W's 'Smash Burgers' with burger sauce Burgers are super easy and cheap to make from scratch. If you make your own you can adapt the ingredients to suit your taste. For example, you do not need to use beef - you could use chicken or pork or even vegan mince. You add other additional fillings like BBQ sauce or onion rings...the options are endless! The quantities in below are for one bun with 2 'smash burgers' in it. One simple home classic that I missed and learnt how to make immediately at university. It is very simple, quite cheap and totally delicious! Ingredients Pasta- Macaroni, 400g Salt, to taste Butter, 3 ½ tablespoons Flour, 3 ½ tablespoons Milk  (skimmed is preferred), 2 ⅓ cups Dry Mustard  (or more to taste),  ½ teaspoon Garlic Powder,  ¼ teaspoon Cream Cheese  (diced into small pieces), 100g Cheddar Cheese  (shredded), 200g Mozzarella Cheese  (shredded), 200g Reserved Pasta Water,  You can find all of these ingredients in a Tesco, ASDA large store, but you can ALSO find them in smaller stores- Tesco Express, Sainsbury's Local etc. Steps: 1- Bring a large pot of salted water to a boil, boil pasta to "al dente" according to package instructions, which is normally 5-8 minutes.
