Mr Bennett’s English “Hot Pot” Solo Bowl
Inspired by the Chinese hot pot style of cooking, this is a very simple and affordable meal that works perfectly when cooking for one. It’s basically an English-style version using supermarket ingredients that are easy to find in Tesco or ASDA. The idea is simple: simmer fish and vegetables in a light broth, cook some rice, and add chilli sauce to taste. It’s warm, healthy, quick, and perfect after a long day.
Ingredients
Frozen boneless fish (salmon, haddock, or whatever is cheapest), 1 portion
Salt, to taste
Black pepper, to taste
Bird’s eye chillies (optional, for heat), 1–2
Vegetable Oxo cube (or vegetable stock cube), 1
Frozen sprouts, a handful
Frozen shrimp, a handful
Baby corn, a handful
Frozen broccoli, a handful
Mushrooms (fresh or frozen), a handful
Rice, 1 portion
Sriracha sauce (Tesco) or Lao Gan Ma chilli oil, to taste
You can find most of these ingredients in Tesco, ASDA, or other large supermarkets, and many of them are also available in smaller stores such as Tesco Express or Sainsbury’s Local. Lao Gan Ma chilli oil can usually be found in Asian supermarkets.
Steps
Bring a medium pot of water to a boil.
Add salt, black pepper, bird’s eye chillies (if using), and the vegetable Oxo cube. Stir until the stock cube dissolves.
Add the frozen fish and simmer gently for about 5 minutes.
Add the frozen sprouts and continue simmering for another 5 minutes.
Add the frozen shrimp, baby corn, broccoli, and mushrooms. Simmer or lightly boil for another 5 minutes, until everything is cooked through.
While the soup is cooking, prepare rice in a rice cooker or according to packet instructions.
Serve the hot soup with a bowl of rice.
Add Tesco Sriracha sauce or Lao Gan Ma chilli oil to taste.
This is a cheap, healthy, and very flexible recipe. You can change the vegetables depending on what’s available in the freezer or swap out the fish for lamb and beef. Perfect for a quick solo dinner.
