Nina Chen's Beef Surprise

Beef slices: 200g; onion: half, sliced, cooked rice: as much
as you want; some broccoli and carrot slices, boiled for a bit
For the sauce: mix together 2 tbsp soy sauce, half tbsp dark
soy sauce, 1 tbsp cooking wine, 1 tbsp oyster sauce, 1 tbsp honey or sugar, 1
tbsp cornstarch, and half a cup of water.
1. Get all your sauce ingredients in a bowl and stir.
2. Bring a pot of water to a boil, then throw in the beef
slices. Take them out the moment they change color, about 30 seconds. This gets
rid of any gunk and keeps them tender.
3. Heat a little oil in a pan and cook the onion slices over
medium heat until they go soft and see-through, should take about 2 minutes.
This brings out their sweetness.
4. Add the boiled beef to the pan with the onions, then pour
in your sauce. Turn the heat to high and stir-fry quickly until the sauce
thickens and coats everything nicely. Then turn off the heat.
5. Put your rice in a bowl, pile the beef and onions on top.
Add the boiled veggies on the side, and finish with a sprinkle of sesame seeds
and chopped spring onions.
Btw: If you don't have honey, sugar works fine.
