Mr O's Super Delicious Pancakes
This is by far one of the cheapest meals you can make that go the distance. They are diverse so each batch can taste totally different depending on the topping!- For example. 1kg of flour and a 12 pack of eggs can set you up for 6 meals, with flour left over for the next time! You can even freeze them safely once cooled for later.
- Ingredients:
- 100g plain flour
- 2 large eggs
- 300ml milk
- 1 tbsp sunflower or vegetable oilplus a little extra for frying
- Lemon wedgesto serve (optional)
- Caster/ granular sugarto serve (optional)
- You may also use fruit of choice to serve instead of lemon and sugar. Best examples are; strawberries, bananas, whipped cream and honey
- You may also swap these out for a savory topping/ filling to serve. Best examples are; ham or poached eggs with a sauce of your choice (Hollandaise is a favorite).
Cooking and Prep:

Put 100g plain flour, 2 large eggs, 300ml milk, 1 tbsp sunflower or vegetable oil and a pinch of salt into a bowl or large jug, then whisk to a smooth batter. This should be similar in consistency to single cream.

Set aside for 30 mins to rest if you have time, or start cooking straight away.

Set a medium frying pan over a medium heat and carefully wipe it with some oiled kitchen paper.

When hot, cook your pancakes for 1 min on each side until golden, using around half a ladleful of batter per pancake. Keep them warm in a low oven as you make the rest.

Serve with lemon wedges to squeeze the juice over and caster sugar, or your favourite filling. Once cold, you can layer the pancakes between baking parchment, then wrap in cling film and freeze for up to two months.
